** you can use chicken as well, just cook it in less time
For the meat: 1 lb neck bones or pork ribs
4 lbs pork loin
1 onion
1 garlic head
3 bay leaves
Salt (your liking)
110 oz hominy- my favorite brand is Juanitas
For the sauce: 20-25 new mexico/ chile guajillo pods
5 chile de árbol
3 chile pasilla
4 garlic cloves
1/2 onion
1 tbsp chicken bouillon
1 tbsp oregano
1 tsp cumin
